Our fish suppliers are chosen for their commitment to animal welfare and the environment. We only use farmed Scottish Salmon from producers who work in unpolluted waters on sites with strong tidal flows, ensuring large, strong, healthy well-muscled fish. The hand graded and hand filleted salmon is smoked using oak chippings, derived from wine barrels and cured with salt and demerara to give a truly superb flavour.

Caviar: future lies with our Baeri caviar (Siberian Sturgeon). Farmed in Italy, this sustainable caviar is available all year round, constantly providing high quality eggs. Try it, you'll be surprised!
