Derrick Tu Tan Pho Impresses at Cacao Barry Chocolate Demonstration

Westminster Kingsway College in London was the location for a fantastic day of demonstration by the wonderful Master Chocolatier and Pastry Chef Derrick Tu Tan Pho. An Earl Grey ganache was just one of the creations made on the day, with Derrick providing a step-by-step commentary. The event was extremely popular with our guests who found the day useful and interesting.

Derrick Tu Tan Pho joined Barry Callebaut as a Technical Advisor in 2006. Barry Callebaut provided the following information about Derrick:

"Derrick began his apprenticeship in Montreal. In 1990, he was awarded “Apprentice Chocolatier of the Year” and in 1994 was recognized as one of the Ten Best pastry Chefs in Montréal. He was a member of the gold-winning Team Quebec for the Frankfurt Culinary Olympics held in Germany. In 1994 he began working at the Scarborough Golf and Country Club and started to teach the Chocolate and Creative Desserts classes at George Brown College in Toronto. In 1998, Derrick Tu Tan accepted a manager position with Costco Canada, where he set up the first Chocolate Shop for the branch. From 2001 to 2006, Derrick Tu Tan presided over the Niagara-on-the-Lake Vintage Inns Pastry Department. He officially joined Barry Callebaut as Technical Advisor in 2006; he designs, initiates and executes the Ambassadors Club and overall programs and policies.

He is the director for the Chocolate Academy in Canada. In 2007, he was in charge of setting up the Chocolate Academy in Chicago which opened in 2008. Derrick Tu Tan continues to travel extensively worldwide lecturing classes in Canada, United States, Mexico, Dominican Republic, United Kingdom, and Switzerland".
